The official drive safe handbook is a very good resource to know about road rules.
Official practice questions can be found here. Highly recommended to practice all of them.
In addition, practice questions from other states (and other non-official websites and apps) can be a good resource.
Hazard Perception Test
The official practice test of WA can be found here. Practice test for motorcycle and moped are also applicable (and recommended) for car.
I think VIC and WA are similar in this regard.
The official practice test of VIC can be found here.
I think VIC offers HPT tests from home. Accordingly several recordings of HPT tests can be found on YouTube. I found these very helpful (search: 'hpt vic'; some results: here, here, here, here, here, here, here). I didn't find all questions same (but I think some are) as WA, but the concept and overall background/resolution are the same.
There are several non-official websites that offer practice tests. I didn't find them very helpful, mostly because the background/resolution are not the same as actual test. Nevertheless, they can be thought of extra practice material to get used to the concept (example here).
SA practice test can be found here, but these doesn't match with WA in terms of background/resolution.
Practical Driving Assessment
I found several YT videos very helpful. Some of the channels are:
Driving School WA: Super helpful contents for practical driving assessment across different test centres at WA.
MyDrive School: Helpful mock tests for practical driving assessment at some test centres.
Conquer Driving: UK-based, but very helpful contents for becoming a good driver.
